The ingredients needed to make Shami kabab:
- Take 1 kg boneless mutton pieces (clean &washed)
- Prepare 400 gms chana dal (soaked in water for 6-7 hrs)
- Prepare 2 onions roughly chopped
- Take 200 ml tomato puree
- Make ready 5-6 dry red chillies
- Prepare 9-10 garlic cloves
- Make ready 3 green chillies
- Take piece Of ginger grated

- Make ready 10-12 mint leaves
- Make ready 3 tsp clarified butter (ghee) juice ofl lemon
- Get 1 cup fresh cream water as required
- Get bread crumbs for coating
- Get oil as required for frying
- Take add after grinding : 2 onions finely chopped
- Get 1 cup coriander & mint leaves chopped
- Get 1 egg beaten

Instructions to make Shami kabab:
- In a pressure cooker add the mutton pieces, chana dal, onions, dry red chillies, ginger, garlic, green chillies, dry spice powder rs, salt, mint leaves & 2 cups water. cook for 8-10 whistles on medium heat. once done switch off the flame. wait for pressure to go & remove the lid
- Chk the mutton pieces if it's done. if still raw add more water & cook in pressure cooker for few more minutes. transfer the mixture in a non stick kadhai & add tomato puree, ghee, lemon juice, fresh cream, & cook till all the water evaporates & mixture is dry. chk for salt
- Cool the mixture & transfer in a big vessel. ground the mixture with a pestle. or u can grind it in a blender
- After grinding the mixture add the onions, mint coriander leaves & beaten egg. combine all the ingredients together & make a dough
- Apply oil in ur palms & pinch a lemon size ball from the dough. roll in breadcrumbs & shape them like cutlets.
- Heat oil in a pan & shallow fry until golden brown & crisp.
- Serve hot with onion rings & ur fav dips
