This was a pretty good recipe of Pinakbet. I was always so fond of this dish growing up, being that it was always available at family parties and my grandma's was hands down, the best! - Heat oil in a big pan

- Add water and simmer for 10-15 minutes or until pork is tender. Add a dash of salt and pepper.
- Add the squash. After 5-7 minutes, add the eggplant.
- Add the remaining vegetables. Season with a bit of salt. Do not overcook.
